Story
Founded in 2021 by Matt Varona and Matthias Ingelmann, IVdrinks was created with a clear mission: to bring high-quality, affordable verjus to the UK market. What began as a response to an industry need has since grown into a dynamic company, building strong relationships and expanding its vision.
These days IVdrinks is split into two arms:
IVstudio - A creative beverage consultancy with an operational focus. Beyond crafting exceptional wine lists and cocktail programs, we ensure seamless implementation. From supplier sourcing and staff training to bar setup and back-of-house integration, we help businesses transform ideas into reality.
IVbrands – Our import and distribution arm. While verjus remains central, we are selectively expanding into new products that fill key gaps in the UK market. We also assist IVstudio clients with sourcing house spirits, wines, and beers, simplifying the import process
Matt Varona
Matt has built a dynamic career in hospitality, specializing in operations, beverage management, and wine curation across some of London’s most exciting restaurant groups. With a strong foundation in restaurant management at Carousel, he transitioned to MJMK Restaurants, where he played a key role in overseeing the operations of acclaimed venues like KOL, Lisboeta, Fonda, and AngloThai.
Over five years, he developed a deep expertise in wine, crafting thoughtful and innovative wine programs that complement diverse restaurant concepts. Now serving as Director of Operations at Carousel, Matt continues to drive excellence in hospitality through strategic leadership, operational innovation, and exceptional beverage programs.
Matthias Ingelmann
Matthias has gained hands-on experience in bar operations across Germany, he then relocated to London in 2017 to further develop his expertise in the hospitality industry. Over the past eight years, he has led and managed beverage programs for 50 Best Bars, Michelin-starred restaurants, and renowned restaurant groups, working across a diverse range of concepts and styles.
Matthias’ experience in opening multiple bars and restaurants has equipped him with invaluable expertise in developing innovative beverage programs, building high-performing teams, and creating comprehensive training manuals.
He thrives on delivering exceptional guest experiences through strategic menu development, operational excellence, and team leadership.
